Sunday morning cinnamon buns

i love to sleep in on sundays. today, however, i woke up at six thirty (how did that happen?!) and couldn’t get back to sleep. so i took a shower, checked my emails, and went on to make some cinnamon buns. they’re rich, delicious, and the perfect sweet treat to start off this sunday. you should be here, our kitchen smells divine right now! here’s the recipe, if you’re interested:

for the dough you’ll need:
1 envelope of dry yeast
120 ml tepid water
120 ml milk
60g butter
60g raw cane sugar
1 egg
1 tsp salt
240 g all purpose wheat flour
240 g spelt flour

put everything in a big bowl and mix together until you have a soft and elastic dough (it shouldn’t be sticky, though, so you might have to add a little more flour). cover your bowl with a kitchen towel and let your dough rise until doubled in a warm place. meanwhile, prepare the filling.

you’ll need:
40 g raw cane sugar
2 tbsp ground cinnamon
some melted butter

stir together the sugar and the cinnamon. when the dough is done rising, roll it into a square. brush it with melted butter and sprinkle the filling evenly over the dough. roll your square of dough into a log, slice it into equal-sized pieces and arrange them in a greased cake pan. bake for 25-30 minutes at 175°c in a preheated oven.

you can also glaze your freshly baked cinnamon buns if you like. mix
1 tbsp milk with
100 g confectioner’s sugar
and drizzle your warm cinnamon buns with the sugar glaze.
